Amputated Antipasto


8 oz Herbed Goat Cheese, softened

16 oz Cream Cheese, softened

2 pkgs Prosciutto

1 mozzarella roll (rolled in prosciutto & basil)

Kalamata Olives

Assorted Crackers


Bring cream cheese and goat cheese to room temperature and mix well. Once softened, line a cookie sheet with parchment paper. Make larger scoops of the cheese for the hand & smaller scoops of cheese for the fingers. Continue to place all of your balls of cheese out onto the parchment paper to form the shape of the hand.


Using a small knife or spatula, begin molding your hand and fingers. Once molded, begin layering prosciutto, wrapping the slices around the fingers. You may need to refrigerate it to firm it up if it becomes too soft.


Extend the prosciutto past the hand where the wrist will be. You will attach the mozzarella roll under this.


Apply a little pressure as you stick the mozzarella roll into the goat cheese portion of the hand.


Roll the prosciutto back over the mozzarella roll. Add a few more slices of prosciutto until you get the desired effect. I chose to leave some of the mozzarella roll uncovered so it would look like bone sticking out.


Cover with plastic wrap and refrigerate until it's firm enough to move to a platter or cutting board. Serve with olives, assorted crackers & a knife stabbed into the hand.
