Porterhouse Steaks










2 lbs Porterhouse steaks, 3/4 inch thick


Rub:

1 cup olive oil

3 TBSP salt

2 TBSP ground coriander

2 TBSP paprika

1 TBSP black pepper

1 1/2 tsp onion powder

1 tsp dried oregano

8 cloves garlic, smashed


Herbed Butter:

2 sticks unsalted butter, room temperature

1 1/2 tsp salt

1/4 cup sliced chives

1/4 cup chopped fresh parsley

1 tsp black pepper


Make rub by mixing all rub ingredients in a bowl or measuring cup. Spread all over steaks. Refrigerate steaks and let marinate for at least 30 minutes. Reserve extra marinade for additional meal during the week.


While steaks are marinating, make herb butter by mixing all together & then place in a log shape onto plastic wrap. Roll the plastic wrap into a log shape & then set in fridge to harden. This can be used later to slice and top steaks.


When almost ready to grill, take steaks out of fridge and let come to room temperature. Preheat grill to 450 deg F. For a medium rare cook, sear steaks for 30 seconds on each side. Then grill for 4 minutes on 1st side, then flip and grill for 3 minutes on 2nd side. Take steaks off the grill & let rest for 10 minutes before slicing. Enjoy !
